Just as iTunes allows you to sync music---and, on some models, video---with your iPod, it allows you to sync other information, such as the names, phone numbers and emails of your contacts, with your iPhone. Delete all contacts with your iPhone by syncing your iPhone with an email address that doesn't contain contacts.

Create a new email account---using Gmail, Hotmail or Yahoo!, for example---if you don't currently own one that's devoid of contacts. If you've ever sent or received an email using a certain account, a contacts list is associated with it.
Connect your iPod to iTunes. Wait for iTunes to launch, then double-click the name of your iPod within the program. Navigate to the Contacts tab.
Click the drop-down menu that appears at the top of the tab and select the name of the email provider with which you have an account without contacts. Enter your username and password for the contact-free account, then click "OK."
Navigate back to the Summary tab and click "Sync." Once your iPhone has finished syncing to iTunes, all your contacts will be gone from your iPhone.
