How to Freeze a Butt Shank Ham

The butt shank of a ham is the lower half of a hog’s back leg. It is less fatty and slightly sweeter than the upper half. Typically, ham is prepackaged in plastic wrap when sold in supermarkets. It is okay to leave this plastic wrap on while preparing it for the freezer.

Things You'll Need

  • Freezer paper
  • Freezer tape
  • Large, freezer bag
  • Ham

Paper Method

  • Unroll freezer paper so that there is enough to place the ham in the middle with wide enough margins to fold and wrap the ham.

  • Turn the paper shiny-side up and place the ham directly in the center, flat-side down.

  • Lift opposite sides of the paper and bring the sides together over the ham. Allow enough paper to make a 1-inch fold.

  • Tape the fold, making a crease. Lift and fold the other two opposite sides in the same manner. Tape those, making a crease.

  • Turn the ham over and press out any air. Continue folding, creasing and taping until the package is airtight. Place the ham in the freezer.

Bag Method

  • Open a large freezer bag and check that entire ham will fit inside.

  • Place the ham in the freezer bag. Make sure that the ham bone or any other part does not puncture the bag.

  • Begin to seal the top of the bag leaving a 1-inch opening at the end.

  • Press all of the air out of the freezer bag and finish sealing the bag. Place it in the freezer.
