How to Make Whole Wheat Strawberry Muffins

These yummy whole wheat strawberry muffins are kid and adult pleasers! These muffins are very moist, because of the yogurt and have the health benefits of being whole wheat.

Instructions

Things You'll Need:

  • 2 cups whole wheat flour
  • 1/2 cup brown sugar
  • 1 1/2 tsp baking soda
  • 2 eggs
  • 1 cup plain yogurt
  • 1/4 cup melted butter
  • 1 tsp vanilla
  • 1 cup chopped strawberries
  1. Step 1

    Heat oven to 350 degrees.

  2. Step 2

    In a bowl mix together the dry ingredients: flour, sugar and baking soda.
    In another bowl, mix the wet ingredients: eggs yogurt, butter and vanilla.

  3. Step 3

    Toss the strawberries into the dry flour mixture from step 2.

  4. Step 4

    Combine the wet and dry ingredients from step 2 above. Mix well.

  5. Step 5

    Spoon the whole wheat strawberry muffin batter into greased or lined muffin tins. Bake for 25 minutes or until tops are golden brown.

  6. Step 6

    This recipe makes 12 whole wheat strawberry muffins. These muffins are ideal for serving at picnics or entertaining because they do not dry out quickly.

  7. Step 7

    SUBSTITUTIONS

    If you prefer, you can substitute 1 cup of the whole wheat flour with white flour

    The strawberries can be fresh or frozen

on 9/8/2009 Great muffins! I'm a huge strawberry fanatic, so I used weight watchers strawberry yogurt and added an extra 1/2 cup strawberries. Definitely making these again.
