For a meal that cooks itself during the day, barbecue ribs are a filling and delicious option. Put the ingredients together in the morning and come home to tender baby back pork ribs ready for dinner. Because the meat cooks slowly in a crock pot or slow cooker, in liquids that tenderize it, the pork will fall right off the bone. Does this Spark an idea?

Things You'll Need

  • 3 pounds baby back pork ribs
  • 12 ounce can of Spicy V-8 juice
  • 3/4 cup pancake syrup
  • 3 tablespoons garlic
  • 1 tablespoon chili powder
  • 1/4 cup red wine vinegar
  • nonstick cooking spray

      Thaw ribs if frozen. Rinse ribs under cool water and place on chopping board.

      Cut ribs with a heavy cleaver or sharp butcher knife into sections of 2-3 ribs each.

      Spray crock pot or slow cooker with nonstick spray. Put in ribs.

      In small bowl combine Spicy V-8 juice, syrup, garlic, chili powder and red wine vinegar. Mix thoroughly.

      Pour sauce over ribs and toss them to coat thoroughly. Set crock pot to LOW for all day cooking, about eight hours, or set to HIGH for half day cooking, about four hours. Place lid on crock pot. Don't remove lid while cooking, because that will increase the amount of time needed to properly cook the ribs.

      When cooking time is complete, gently toss ribs in sauce to make sure all are coated. The meat should be very tender. Remove from crock pot and place on a serving plate. This dish pairs well with rice or coleslaw.

Tips & Warnings

  • Ribs will be very hot when first removed from the slow cooker, so allow them to cool for at least five minutes before serving.
