1
Place your flour inside a bowl and create a well in its center with your fingers.
-
2
Add the eggs, egg yolks and salt to the well. Mix the eggs into the flour using your hands.
-
3
Add the water to the mixture 1 tbsp. at a time. Continue adding the water and mixing with your hands until the dough is formed into a ball.
-
4
Cover the dough ball with a moist towel and let it rest for 10 minutes. Then, divide the dough into four parts.
-
5
Sprinkle flour onto a clean surface and turn the dough pieces out onto it. Flour the rolling pin and roll out each dough section out until it is paper thin. If the pasta is too thick, it will not cook properly.
-
6
Cut the rolled-out dough into strips using a pizza wheel. Thin noodles should be about 1/8 inch thick, while thicker noodles should be about 1/4 inch thick.
-
7
Place the noodles on a clean, dry towel and let them dry for about two hours. If you want the noodles to be smaller, break them into smaller pieces when they have dried.
-
8
Cook the noodles in salted boiling water until they reach the desired tenderness. This should take about 15 minutes.
