Try using some coarsely chopped peanuts or cubed orange sections in place of the onion. Serves 6 and is easily halved or doubled.

  • 1/2 cup seedless raisins, washed and drained
  • 1/4 cup mayonnaise
  • 1/4 cup plain yogurt
  • 2 tbsp. fresh lemon juice
  • Salt to taste

  • Purple onions

Combine carrots, onion and raisins in a medium-size bowl.

Whisk mayonnaise, yogurt, lemon juice and salt together in a small bowl

Pour the mayonnaise mixture over the vegetables and mix gently.

Refrigerate until ready to serve.
