How to Make Carrot-and-Raisin Salad

This salad can be as simple as combining shredded carrots and raisins with a little mayonnaise but, by adding a little creativity, it becomes healthier and tastier. Try using some coarsely chopped peanuts or cubed orange sections in place of the onion. Serves 6 and is easily halved or doubled.

Things You'll Need:

  • 3 cups shredded carrots
  • 1/3 cup grated purple onion
  • 1/2 cup seedless raisins, washed and drained
  • 1/4 cup mayonnaise
  • 1/4 cup plain yogurt
  • 2 tbsp. fresh lemon juice
  • Salt to taste
  • Bowls
  • Rasins
  • Yougurt
  • Salt
  • Whisks
  • Lemon Juice
  • Carrots
  • Mayonaise
  • Purple onions
  1. Step 1

    Combine carrots, onion and raisins in a medium-size bowl.

  2. Step 2

    Whisk mayonnaise, yogurt, lemon juice and salt together in a small bowl

  3. Step 3

    Pour the mayonnaise mixture over the vegetables and mix gently.

  4. Step 4

    Refrigerate until ready to serve.
