Most high temperature cooking thermometers produced these days are designed to be used for either candy making or deep fat frying. The temperature range used in both cooking techniques is very similar and, therefore, makes the thermometer that you buy that much more functional.

It's important that you select the right thermometer for your needs. There are three basic display options available; digital readout, dial readout and vertical scale readout. Also, it is very important that you select a thermometer that has a clip on it. To achieve an accurate reading the thermometer clip must be aligned on the thermometer so that it keeps the bulb from touching the bottom of the pan.
