"Today we're going to cook our pork butt. There's two steps to this in cooking it. The pork butt is also a tougher cut of meat. This is a partial cap off, what it does is just leaves thin layer of fat which is called a fat cap on here. Usually it comes with a bigger layer but we like to get a partial so we don't have to trim it. We don't have to trim this meat at all. We just cut the package open and it's ready to go right into the smoker. This is a perfect pork butt. Perfect size. It probably weights about I would say about eight or nine pounds. You can get these also in a smaller cut half this size. There's a difference, this is not a pork roast, it's not a ham, it's not a collar. The butt is best for pulled pork because of the fat cap and it's good for flavor. Ok, so you can see the fat within the layers of fat we like it the fattier the better for this kind of meat. We have a bone in product"
