We are going to be making some prime rib. Now what you want to do after an hour and a half is you have one of these, it's called a probe thermometer. You don't want to put this in the meat and in the oven cause this will melt. Take it out, put it just on the door then put this into the thickest part of the meat. If you want a medium rare prime rib, you want 130 degrees. If you want a medium, you want about 145 degrees and if you want to go a medium well which I recommend for prime rib, is about 150 degrees. That is how you do it just keep an eye on it until after that hour and a half and check it every 10-15 minutes or so and you'll have a beautiful rib, we'll show you what that looks like.
