I'm going to show you how to make white chocolate Oreo balls. What we're going to do is just take our spatula and just constantly keep it moving. You might want to get a mitt, because this will eventually start to get hot. You see as it starts to melt, what you want to keep doing is folding with your spatula. What's great about these silicon spatulas is you can get all around the sides and just bring it over and bring it over. It's probably going to take another minute and we'll be ready to go. You see just by constant stirring, lifting from the bottom. You don't want to get this to a boil, or if you ever see a boil. If you are, you have your flame too high. You don't want your water underneath to boil. All you're looking is to get the steam to make the bowl hot enough to melt the chocolate, always going around the sides and folding. You want it to be nice and creamy like that. Look at how beautiful.
