"Hi my name is Greg Goldberg, you can reach us at www.minettis.com. In this segment we are going to be talking about sauce and putting sauce on a pizza. Now in the last segment we talk about dough and stretching it. Once you have the pizza dough stretch and on the pizza peal the next step is obviously is to add the sauce. Now there is variety of different ways that you can make the sauce and there is a variety of different sauces. This is the one that we use at the restaurant it has all the basics ingredient we make it out of plum tomatoes, we have salt and pepper, and oregano. Oregano is basically the pizza maker spice. Romano cheese a lot of good things in here. Now when your putting of leveling the sauce on to the pizza you need to be careful not to get any on the pizza peal. What that would do it would make a rough spot and the pizza would not slide off the teal. It is going to destroy your pizza. What you do is very careful ladle with no drips oh oh you can fix it it is no problem on to the center of the pizza place the ladle like so and just start making gentle motions in a circular outward fashion. Now you don't want the sauce to go all the way but you want to spread it to about 1 1/2 inch to 2 inches give or take. Different people like different amounts of sauce. I would say like a general rule between 6 to 10 ounces of sauce. Here at the restaurant we use about eight it is just the matter of your preferences."
