Okay, so we left our puff pastry out since the beginning here which means it should be nice and ready to go. Now the one thing you want to keep in mind with puff pastry is you want to try to avoid pinching it, because if you smoosh it together that’s what keeps it from puffing. So what I’m going to do, just going to very carefully unroll this and this is going to be our bottom piece. So I’m going to do two steaks on here and actually cut it in order to minimize the amount of time and handling I have to do with it so I’m going to put one steak here, and I’m going to put one steak here and what I’m going to do is put the other piece on top and I’m just going to cut it across the center like this, diagonally, so. One other thing that you’ll notice, is that traditionally on a Beef Wellington, you would also have either a tate or a fois gras layer on top of the duexelle, I’ve got my duexelle back, nice and cold. So I’m going to put a pretty generous portion here on top of each one of these. I just opted to not do the fois gras because it’s kind of a, kind of a polarizing ingredient. Other people like it, some don’t, some people don’t like it for the humanity factor, so and also I don’t really care for it myself. So, there’s that.
