Hi, I'm Ellen Bass. Today, I'm going to make a beef Wellington recipe for you. You're going to be amazed at how easy it is to make beef Wellington. It's a very elegant dinner, but you can actually have it on a week night because it's so quick. Or you can have it for a dinner party. You can make a Béarnaise sauce to go with it. So, let' get started. What you're going to need for this recipe is filet mignon. And I like to get my pieces about two inches thick. Depending on how many people you're going to be serving, you can get as many filet mignon pieces as you would like. You'll want puff pastry which is found in the frozen section of your grocery store. And it should be thawed at room temperature for about 40 minutes. One egg yolk or two, if you're serving four or six people. And you're going to need some olive oil or canola oil for searing your filet mignon before you put it into your puff pastry. And let's get started with how to do it. Take your filet mignon and sear on each side for about one minute in a saute pan with about one tablespoon of canola oil or olive oil. To get a nice crust on there. Meanwhile, take your puff pastry and roll it out with flour. You don't want it too thin, but it does need to be rolled out. Take your seared piece of tenderloin and put it in the center of your puff pastry. Take a knife and score around to the point where you think that it's going to fit. You don't want too much pastry at the bottom, otherwise your beef Wellington will be very doughy at the bottom. So, once you flip your Wellington, put it on a baking sheet that has parchment paper. Brush it with egg yolk and put it in a 400 degree oven for 15 minutes for medium rare, 18 minutes for medium. You can cook it for a little bit longer, if you would like your meat medium or medium or medium well. 18 for medium and about 20 to 21 for medium well. Enjoy.
