Hi, my name is Matthew Silverman, and today I'm going to show you how to make fig jelly. This recipe is very simple and highlights the flavor of the fig. For our fig jelly, we start with half a cup of water and two tablespoons of pectin. We dissolve the pectin in the water. Then, we take two pounds of fresh figs, one and a half cups of granulated sugar and one lemon that we squeeze. All the ingredients are added to the pot and simmered around 20 minutes on low heat until the fig jelly has thicken.
