Hi. I'm Katie Sweeney, and today I'm going to show you how to make a quick and easy, but absolutely tasty appetizer of whipped feta with roasted red peppers on bruschetta. We're going to start with this six-ounce block of feta cheese that we're going to cut into just some more manageable slices. We've got our rough-diced feta into a food processor. We're also going to add the juice of half of a lemon, a quarter cup of heavy cream, this is what's going to give it that nice whipped texture. A quarter of a cup of olive oil and then a good, generous pinch of salt and pepper. We're going to turn this food processor on and let all of the ingredients come together. So, check out the feta; it's got a thick, fluffy, creamy texture. What we're going to do is just take a little and spread a generous helping on our toasted bread, bruschetta. So, I have one whole roasted red pepper here that is store-bought, but you could also roast your own and I sliced it up into little pieces. The finishing touch is a little sprinkling of toasted, slivered almonds and, as well as for a little bit of greenery, parsley. And, how pretty is that?
