Hi, guys. This is chef Suzy Singh, and today we're in the kitchens of Le Cordon Bleu for eHow.com. I am so excited about the meal that we're going to make today. We're going to do sweet potatoes but in a new notch. So what we're going to do is sweet potatoes with cinnamon, nutmeg, brown sugar and marshmallows. So let's get started. First thing we're going to do is line the sheet pan with a little bit of parchment paper. The reason why I do this is because there's a couple of reasons. The first is you really don't want these root vegetables to stick to the bottom and it really helps leave anything that's sticking because we're going to be doing a glaze today. All right so let's put these sweet potatoes in this baking pan. Now what we're going to want to do is preheat the oven at 400 degrees Fahrenheit. The reason why we're doing this is so once we're done with the glaze we can put it right over those sweet potatoes and we can get going. So what we want to do is in a sauteeing pan, put it on medium low heat then you're going to add in butter. I like doing room temperature butter. It melts quicker. And what's so great about this is that is going to give you that umami taste that you're looking for when it comes to the sweet potatoes. Super nutritious for you. So now we're going to add in brown sugar, nutmeg, cinnamon, little bit of vanilla extract, or you can also add half a vanilla pod. Oh yeah. Wow. This is smelling delicious. You're going to want to cook this for about five minutes until you reach medium simmer. And then you're going to pour this over your sweet potatoes. What I love about this is once we pour this over the sweet potatoes, it's going to create a natural glaze. All right, let's put this on. So we've got our sweet potatoes right in front of us. Make sure that they're not overly crowded. Spread them out a little bit. All we're going to do is pour this right over. Wow. The entire kitchen smells like brown sugar, butter and vanilla. This is gorgeous guys. Now all we want to do is spread out the marshmallows. When you're doing this with your kids, it's going to be super simple because you can have the kids cut the marshmallows in half or even into quarters and put them over the sweet potatoes. And you can eat some along the way. All right, so we're going to cover this in aluminum foil and then put it in the oven for 400 degrees. Let it go for about 30 minutes. If you have a convection oven, put it in the oven for about 375. Once it's done, bring the oven temperature up to 425 degrees for another five minutes. Let these marshmallows brulee. All right guys, we've just finished with the sweet potato wedges. This is delicious and it's great for the holidays.
