Hi, guys. This is chef Suzy Singh from the kitchens of Le Cordon Bleu at eHow.com. Today, I'm going to show you the techniques and recipes that I learned in culinary school. So, let's get started. Today, we're going to do a sweet potato with a gorgeous marshmallow fluff. What we're going to start off doing is cubing the sweet potatoes into on inch cubes and then we're going to spread that out on this parchment paper. What we're doing is we're just putting this into a baking pan. We're using about three pounds of sweet potatoes. The next step is to preheat your oven to 350 degrees because we're going to bake this off and do something else. So now we're going to add four tablespoons of butter into a sautee pan. Now that the butter is melted we're going to add two-thirds cup of brown sugar. This is going to create a lot of sweetness for those sweet potatoes. You can already see that the molasses in the brown sugar is dissolving in the butter. Then we're going to add a little bit of clove, ground ginger, nutmeg, a little bit of salt and cinnamon. We're going to sautee this on medium low heat for about five minutes. Now that this has come to a soft boil we're going to pour this over our sweet potatoes. What's really beautiful is we're actually infusing the spices in to this glaze. So now we're going to put about a cup and a half of marshmallows. I prefer using mini marshmallows but if you've got these ginormous marshmallows, what I suggest doing is just cutting them into quarters. So what we're going to do is we're just going to place spread them across our gorgeous sweet potato. So I've got to tell you, when it comes to sweet potatoes, it's really great because you're getting your daily intake of calcium as well as Vitamin C. It's so good for you and it's so delicious. I think it's one of the most underrated root vegetables. I think it's intimidating because a lot of people just don't know what to do with it. So it's great that you guys are actually on eHow right now because you guys can learn a bunch of recipes from sweet potatoes all the way up to some other delicious treats that we'll have in store for you. So now that this is done, we're just covering it with the marshmallows. We're going to put this in the oven at 350 degrees and what I want to do is I want to wrap this aluminum foil right on top of this pan. We're going to let it go for about 45 minutes then we're going to take that aluminum foil out and we're going to let it go at 450 degrees for five minutes. Now that we're done, we put the sweet potatoes and the marshmallow into this bowl and we're ready to serve. What you'll notice that it has this like gorgeous thick glaze that you get from the sweet potatoes being in the oven as well as that brown sugar that caramelized with the butter.
