Hi, I'm Daria Artem, Chief Confectionery Officer of Lady Fortunes Gourmet Cookie Company and I'm here to show you how to make your most amazing chocolate frosting using candy melts. What I do is I start with one cup of heavy cream, it's all you need. And we bring it to a boil on our stove top. Once it's and this has been sitting here already for a few minutes and it's pretty much almost brought to that boil. You don't want to burn it, you just want to bring it up to where you see those first bubbles pop up and we're going to turn that down and we're going to go ahead and pour that into our mixer. Then, we've got about 12 ounces of candy melt right here. We're going to drop that in and we're going to go ahead and stir the candy melts together with the heavy cream. The heavy cream is going to melt those candy melt right away. And what we're going to do is we're going to go ahead and start our mixer. And we're just going to go ahead and beat that for a few minutes here. Now, this is basically one of my most favorite chocolate frosting recipe and it's so versatile. This is your basic ganache recipe. And when I do like a chocolate frosting, when I make a cake, I love to use a chocolate ganache. This one's really easy because you don't have to temper the chocolate or anything. You can use candy melt, such as good as buying it from the store. So, this has been stirring for about five minutes now and as you can see, it's becoming really rich and thick. Then, we're going to go ahead and turn that down. We're going to go ahead and shake off any excess. Oh, this is a rich frosting. I promise you, this is going to be your favorite frosting ever. Oh, my goodness, look, take, take a look at that. Isn't that delicious? Hmmm, smells so good and you can make this with the white melt or the dark melt or the milk melts or anything at all. And you know, I've got some cupcakes here; you can dip them in. And, and there you have it, a delicious icing made with chocolate candy melts.
