Instructions

    • 1

Place pork spare ribs on a clean cutting board.

    • 2

Pull off the outer membrane of the ribs. Use a paper towel to grip the membrane, as it will be very slippery.

    • 3

Cut off excess fat and any hanging excess meat with kitchen shears.

    • 4

Season both sides of the ribs liberally with a dry rub seasoning mix of your choice. Place the ribs in a pan in the refrigerator for 24 hours.

    • 5

Prepare your grill for indirect cooking by placing charcoal and hickory wood on one side of the grill. If you are using a gas grill, turn on only one side of the grill and heat to 250 degrees Fahrenheit.

    • 6

Place the ribs on the grill and cook for 2 to 3 hours with the curl side facing up.

    • 7

Flip the ribs over with tongs and cook for another one hour, or until the ribs are very tender and bendable.

    • 8

Spread barbecue sauce over the ribs if you want wet ribs during the last 15 minutes of cooking. If not sprinkle more seasoning over the dry ribs and remove from the grill.

    • 9

Cut between the bones of the rib rack and serve hot.
