Haddock is a white fish with a mild taste that can be used as a substitute for cod. Create a simple dinner by accenting the flaky, firm flesh with a simple sauce of lemon butter and herbs. Or create complexity of flavor with the addition of bacon and bread crumbs. Serve with mixed vegetables and a starch such as rice or baked potatoes.
Things You'll Need
- Basic Baked Haddock:
- 4 haddock fillets
- 2 cloves garlic, minced
- 1 tsp. curry powder
- 1 tsp. dried parsley
- Salt, to taste
- Pepper, to taste
- 1/2 cup butter, melted
- 1/4 cup lemon juice
- Baked Stuffed Haddock:
- 2 lbs. haddock fillets
- 2 tbsp. butter
- 1/4 cup onion, chopped
- 1/2 tsp. paprika
- 2 cups seasoned bread crumbs
- 4 strips bacon, cooked and crumbled
Basic Baked Haddock
Preheat oven to 375 degrees Fahrenheit. Arrange haddock fillets in a baking dish. Combine garlic with curry powder and dried parsley. Rub the fish fillets with the spice blend. Sprinkle with salt and pepper, to taste.
Combine melted butter and lemon juice. Pour half of this mixture over the haddock fillets in the baking dish. Place the baking dish in the oven and bake for 15 minutes.
Open the oven and, without removing the pan, pour the remaining lemon butter mixture over the fish. Bake for another 15 minutes or until the fish flakes easily with the touch of a fork. Serve hot.
Baked Stuffed Haddock
Arrange half of the haddock fillets in a single layer in a baking dish and set aside. Heat butter in a skillet. Add chopped onion and cook until translucent, about 5 minutes. Stir in garlic and cook for another 3 minutes. Remove from heat.
Combine in a small bowl dried parsley, paprika and seasoned bread crumbs. Stir in the onion and garlic mixture and bacon.
Spread the bread crumb mixture on top of each fillet in the baking pan. Top each fillets with another fillet. Bake for 40 minutes at 450 degrees Fahrenheit. Serve hot.
