Baked Salmon Patties Using Canned Salmon


Salmon patties are a comfort food your whole family can enjoy. If you use canned salmon and leftover mashed potatoes, they are quick and cheap, too. Salmon patties are also high in omega-3 fatty acids, which is an added health bonus. There are many variations to this home-style dish; once you've familiar with its taste, you can add new ingredients to suit your palate.

Things You'll Need

  • 1 can salmon
  • 1 egg
  • 1 cup cold mashed potatoes or 1/3 cup instant mashed potato flakes
  • Salt and pepper
  • 2 tbsp. olive oil
  • Preheat your oven to 450 degrees Fahrenheit. Line a baking sheet with wax paper or spray with a non-stick cooking spray. Finely chop and sauté one onion. You can also chop 2 sprigs of parsley if you enjoy this flavor.

  • Combine 1 can of salmon, 1 egg and 1 cup of cold mashed potatoes (or 1/3 cup instant mashed potato flakes). Add the sautéed onion. An optional ingredient at this point is 1 to 2 teaspoons of Dijon mustard, 1 finely chopped clove of garlic, 1/4 tsp. dill weed or 1/4 tsp. celery salt. Add salt and pepper to taste.

  • Form the ingredients into 2-inch balls and place them on your baking sheet. Flatten them into patties. Brush a small amount of olive oil over the patties. This will make them crispier. You can also use melted butter. If you like, you can coat the patties in bread crumbs to add more texture. Bake the patties for 20 to 25 minutes.

  • Put on the finishing touches. A creamy dill sauce pairs well with this recipe, as does tartar sauce. Surprisingly, ketchup tastes equally satisfying. Garnish with a lemon wedge or a sprig of parsley and serve with a side of leafy greens.

Tips & Warnings

  • The patties are best if they are first fried over medium-high heat for 2 minutes on each side, then placed in the oven to bake for 20-25 minutes.
