How to Make a Cake With a Pressure Cooker

Pressure cookers use a tightly sealed vessel to create pressure and increased heat from steam. This allows foods to be cooked more quickly. It also provides the opportunity to cook foods like cakes over a flame or on a stove top so that they can be made without a traditional oven. When baking in a pressure cooker there are two options: the dry method and the wet method. (reference 1)

Things You'll Need

  • Baking pan (smaller than the inside diameter of your pressure cooker)
  • Baking dish (for dry baking)

Dry Baking

  • Prepare your cake according to the recipe. Grease the baking pan and pour the batter into the tin.

  • Heat the pressure cooker on your stove top (or other heat source) on high for two minutes. Insert your baking dish into the pressure cooker (to keep the baking pan from touching the bottom of the cooker). Alternatively, you can put a two inch layer of sand in the bottom of the cooker if you do not have a baking dish.

  • Set the baking pan on the baking dish inside the pressure cooker. Close the lid and let the cooker heat for two more minutes on high heat. Turn the heat to low for 40 minutes. After 40 minutes turn off the heat and let the cooker stand for ten minutes before removing the lid.

  • Stick a toothpick into the middle of the cake and remove it. If it comes out clean, the cake is done. If not, replace the lid and heat on low for an additional ten minutes. Let it stand ten minutes off the heat and then test it again for doneness. (reference 2)

Wet Method

  • Prepare your cake batter according to the recipe. Grease a baking pan and then pour the batter into the tin.

  • Put the tin into your pressure cooker and pour water into the cooker to a level of one inch below the edge of the baking pan. Put the lid on the pressure cooker and place it on the stove over medium heat for 30 minutes.

  • Remove the lid and remove the cooker from the heat. Let the cake sit for five minutes. Test the cake for doneness by piercing the middle with a toothpick; if it comes out clean, the cake is done. If the cake is not done, pour more water into the pressure cooker and replace the lid. Heat it on medium for an additional ten minutes before removing it from the heat and testing it again for doneness.
