Baked cod is a quick and easy dish, and if you don't add a lot of fatty ingredients, it can be healthy as well. The mild taste of cod can be dressed up with a variety of herbs and vegetables, but if you're in a hurry, baked cod can be as simple as drizzling butter and lemon over a thawed filet and sliding it into the oven. Generally speaking, baked cod is ready to eat in about 15 to 20 minutes, though it tends to dry out while cooking, so remember to use a little olive oil, butter or basting liquid to keep it moist.

  • Aluminum foil
  • 1 lb. thawed cod filets
  • 1 tbsp. olive oil or melted butter
  • Salt and pepper to taste
  • Nonstick cooking spray
  • Lemon slices (optional)
  • Parsley flakes (optional)
  • Deep Dish:
  • 1 lb. thawed cod fillets
  • Oven-safe baking dish
  • 1 sliced tomato
  • 1/4 to 1/2 sliced onion (to taste)
  • 4 slices cheese, according to preference
  • 1/2 cup whole milk
  • Breaded:
  • 1 lb. thawed cod fillets
  • 1/4 cup dry bread crumbs
  • 1/4 cup tartar sauce
  • 1/4 tsp. seasoned salt
  • Nonstick cooking spray
  • Large mixing bowl
  • Baking tray

      Preheat the oven to 350 degrees Fahrenheit.

      Line a baking tray with aluminum foil. Spray it lightly with nonstick cooking spray. Place the fillets on the tray.

      Drizzle the fillets with the olive oil or melted butter. Season the fillets with salt and pepper to taste. Top with lemon slices.

      Bake 15 to 20 minutes or until the fish flakes easily when prodded with a fork. If you want to dress up the fillets, sprinkle lightly with parsley flakes just before serving.

    Simple Deep Dish

      Season the fillets with salt and pepper to taste. Layer the fillets in the bottom of an oiled dish. Place a layer of tomatoes on top of the fillets and a layer of onions over the tomatoes.

      Add a layer of cheese on top of the onions. Pour the milk over all.

      Bake at 375 degrees for 25 to 30 minutes.

      Mix the bread crumbs and seasoned salt in a bowl.

      Cover the fillets with the tartar sauce and place them on a greased baking tray.

      Sprinkle the crumb mixture over the fillets.

      Broil the cod for 5 minutes or until done.

Tips & Warnings

  • Try to keep your fillets of a uniform size to prevent over- or under-cooking.

  • Be sure the cod is fully cooked. A cod fillet should have a uniform internal temperature of 155 degrees Fahrenheit. The fish is done when it is solid white in color and flakes easily.
