How to Make Homemade Ice Cream With Coconut Milk

Coconut milk, white liquid made from the meat of a coconut, has its own particular flavor that is quite different from dairy milk. Even though coconut milk and dairy milk are different, you can use coconut milk when making ice cream instead of dairy milk. Whether you are looking for an interesting, new ice cream taste or you are serving people with a dairy intolerance, the procedure for making homemade ice cream with coconut milk is not very different from making regular ice cream. Things You'll Need

  • Bowl
  • 4 egg yolks
  • 1/2 cup sugar
  • Whisk
  • 2 cans coconut milk
  • Pot
  • 2 teaspoons vanilla extract

Instructions

      Add 4 egg yolks and 1/2 cup sugar to a bowl.

      Whisk the egg yolks and the sugar together for one to two minutes until the mixture is a creamy, light yellow in color.

      Add 2 cans coconut milk and whisk until the yolk and sugar mixture and the coconut milk are completely combined.

      Transfer the mixture to a pot over the stove.

      Turn the heat on to medium high and cook until the mixture begins to get thick, about 10 minutes. Stir constantly.

      Remove from heat.

      Stir in 2 teaspoons vanilla extract.

      Rinse and dry the bowl and transfer the mixture from the pot to the bowl.

      Place the bowl in the refrigerator for about two hours.

      Transfer the bowl to the freezer for 30 minutes.

      Remove the bowl from the freezer. Beat the mixture. Place the mixture back in the freezer for another 30 minutes. Repeat this process two more times. After the third and final beating, and the 30 minutes of freezing afterward, the ice cream should be ready to eat.

Tips & Warnings

  • If you are using an ice cream maker, transfer the mixture from the pot into the central chamber of your ice cream maker in Step 8. Follow the instructions for your model of ice cream maker after that step.

  • If you have leftover ice cream, be sure to store it in a freezer-safe, airtight container. Otherwise, crystals will grow on the ice cream.
