Eggplant is a common ingredient, side dish and sometimes even the main course in Mediterranean cooking. The thick,fleshy texture of eggplant makes it a good meat substitute if you need to prepare a vegetarian meal, and eggplant almost always makes for a healthy meal. One good example that's easy to prepare is Italian-style grilled marinated eggplant.
Things You'll Need
- Vegetable peeler
- Kitchen knife
- 2 medium eggplants
- 3 tbsp. fresh basil, or 2 tbsp. dried
- 2 tbsp. balsamic vinegar (can use red wine vinegar)
- 4 large cloves garlic, minced
- 1 tbsp. olive oil
- Salt and pepper
- 3 tbsp. grated Parmesan cheese
Peel the eggplants and cut the stems off. Then cut them into slices that are between 1/4- and 1/2-inch thick.
Combine the basil, vinegar, garlic and olive oil in a mixing bowl. Add salt and pepper to your own taste.
Put the eggplant slices in the bowl and toss them so they get a complete coat of the marinade. Leave them to soak up the flavor for 30 minutes.
Switch on your oven's broiler. Set the eggplant slices out on the grilling pan, and put them underneath the broiler on the top oven rack. Cook for five minutes, then flip the slices with a pair of tongs and cook the other side for five minutes.
Remove the eggplant from the oven and switch the broiler off. Sprinkle with the Parmesan cheese while the eggplant slices are still hot. Let them cool for a few minutes before serving.
