Chow mein, a traditional Chinese dish with stir-fried noodles, can be made with a variety of noodles and meat. As a stir-fry dish, it can be a healthy dining option. Does this Spark an idea?

Things You'll Need

  • 1 8-oz. package of Rice Noodles (also called rice vermicelli or rice sticks)
  • 1/2 cup of chicken broth
  • 3 tbsp. oyster sauce
  • 1 tbsp. soy sauce
  • 2 tsp. corn starch
  • 1 tsp. sugar
  • 1 1/2 tbsp. peanut oil
  • 4 chicken breasts, cut into 1-1/2 to 2 inch strips
  • 1 onion, sliced and cut into bite sized pieces
  • 3 carrots, julienne cut
  • 1 stalks of celery, sliced
  • 3 stalks of Bok Choy, sliced (separate the stalk slices from the leaf slices)
  • 2 cups of Chinese cabbage, sliced into bite sized pieces
  • 1 cup of mushrooms, sliced
  • 5 green onions, cut into 1 inch pieces
  • 3 cups of bean sprouts
  • 1/2 cup of sliced water chestnuts

Instructions

      Soak the rice noodles in a pot of cool water for one hour. Drain the noodles.

      Place chicken broth, oyster sauce, soy sauce, corn starch and sugar in a bowl and whisk together. Set aside.

      Pour peanut oil into a wok and heat the wok over a medium high heat until hot. Add chicken and stir fry until the chicken is browned. Set aside.

      Add onions, carrots, celery and the stalk slices of the bok choy and stir fry for about four minutes. Add the mushrooms, leaf slices of bok choy and Chinese cabbage to the wok and stir fry for two more minutes.

      Add the green onions, bean sprouts and water chestnuts; stir fry for one minute. Add the rice noodles that had been previously soaked and mix all together. Continue to Stir fry for two more minutes.

      Push the ingredients up the side of the wok and create a well to stir the sauce. Pour chicken broth mixture into the bottom of the wok and stir into it thickens.

      Bring all ingredients into the sauce and mix together. Stir for about 1 1/2 minutes to make sure everything is thoroughly coated and heated throughout.
