How to Make Haluski (Fried Cabbage and Noodles)

Haluski is one of those comfort foods that is cheap and easy to make. It is a very popular PA Dutch dish that my grandmother served often. Haluski is easy to make with just a few ingredients but I find that it is much easier to put together if you cook the cabbage in small batches then place in a crock pot to keep warm.

While haluski is very cheap to make, it is also very fattening. For this reason I only make it a few times a year. You can make it less fattening by using less butter but personally I think it's the butter that really makes this dish taste so good

Instructions

Things You'll Need:

  • 1 head green cabbage
  • 1 large yellow onion
  • 2 or 3 sticks butter
  • 16 ounce bag egg noodles
  • Salt and pepper
  1. Step 1

    Core and slice the green cabbage. I find it easiest to cut into wedges then cut the wedges into thick strips; set aside. Peel and slice the onion.

  2. Step 2

    Melt 1/2 stick of butter in a large frying pan over medium heat. Add onion and cook until tender. Add some of the cabbage and saute until tender.

  3. Step 3

    As the cabbage becomes tender place in a crock pot set on warm. Add more butter to the pan and more cabbage. Continue frying the cabbage in batches and adding it to the crock pot.

  4. Step 4

    When you are almost finished frying the cabbage, bring a large pan of salted water to a boil. Cook noodles until just tender and drain (do not rinse).

  5. Step 5

    Add the noodles to the crock pot and combine. Add additional butter if needed, and salt and pepper to taste. Serve immediately.

Tips & Warnings
  • You can make this less fattening by cutting back on the butter; although the butter really makes haluski taste great.
  • If you are watching your carbohydrate intake try preparing with half the amount of noodles.
  • Haluski tastes great as a side dish to pork chops or a pork roast. You can also chop up a small amount of leftover cooked pork and mix it with the haluski for a one dish meal. Either saute it with the cabbage or just throw it in the crock pot and allow to heat through.
  • To easily fry cabbage just saute for a few minutes then reduce heat and cover the pan. Allow to cook about 10 more minutes; stirring occasionally until tender.
  • I always serve haluski immediately but if you don't plan to serve right away be sure to under cook the noodles just a bit since they will continue to cook in the crock pot.
  • Some recipes call for making the noodles from scratch. However, using store brought egg noodles still produces a tasty dish in a lot less time.
