How to Make Haluski (Fried Cabbage and Noodles)

How to Make Haluski (Fried Cabbage and Noodles)thumbnail
Cabbage is among the starring ingredients in a traditional haluski dish.

Haluski is a traditional Eastern European comfort food that only requires a few ingredients, but can be jazzed up, based on your tastes. Traditional haluski involves at the minimum wide, soft noodles with seasoned, sauteed cabbage and onions, and can include pork, bacon or pancetta, and garlic. You can use a Dutch oven to prepare this or make the cabbage in a slow cooker to keep it warm until you're ready to bring the dish to the table.

    Instructions

    Things You'll Need

    • 1 head green cabbage
    • 1 large yellow onion
    • 2 to 3 sticks butter
    • 16 oz. bag wide egg noodles
    • Salt and pepper
      • 1

Core and slice the green cabbage. Cut the cabbage into wedges, then cut the wedges into thick strips; set aside. Peel and slice the onion.

      • 2

Melt 1/2 stick of butter in a large frying pan over medium heat. Add onion and cook until tender. Add some of the cabbage and saute until tender.

      • 3

As the cabbage becomes tender, place it in a slow cooker set on warm or in a Dutch oven placed in a warm oven. Add more butter to the pan and more cabbage. Continue sauteing the cabbage in batches and adding it to the slow cooker or Dutch oven.

      • 4

Bring a large pot of salted water to a boil. Add the wide egg noodles and cook until just tender. Drain, but do not rinse the noodles.

      • 5

Add the noodles to the slow cooker or Dutch oven and combine. Add additional butter if needed, and salt and pepper to taste. Serve immediately.

    Tips & Warnings

    • You can make this less fattening by cutting back on the butter and making up the difference with olive oil.

    • Haluski tastes great as a side dish to pork chops or a pork roast. You can also chop up a small amount of leftover cooked pork and mix it with the haluski for a one-dish meal. Either saute it with the cabbage or add it to in the slow cooker/Dutch oven and allow to heat through.

    • If you don't plan to serve the haluski right away, undercook the noodles just a bit because they will continue to cook in the slow cooker.
