How to Make Nigerian-Style Fried Rice

Nigerian fried rice is actually a mix of rice and meat. The meat can be beef, liver, goat meat or chicken, and some recipes call for shrimp at the end. Even with the mixed-in meat, the fried rice is usually served as a side dish to meat. Like many other Nigerian dishes, the measurements are not exact and should be altered according to taste. Things You'll Need

  • Vegetable or corn oil
  • 1 medium onion (diced)
  • ½ lb meat (cooked and diced)
  • ½ cup peas and carrots(optional)
  • Chopped green and red peppers (optional)
  • Salt
  • Long grain rice (pre-cooked)

      Cook the rice and set it aside.

      Cook the meat with any spices and vegetables for about 30 minutes.

      Add the peas, carrots and peppers to the meat pot. Let them cook together until the vegetables are cooked through but not soft.

      Put some oil in a pan and let it get hot.

      Add about a cup of the rice, and a bit of the meat and vegetables mix, to the oil. Stir until the rice, meat and vegetables mix. Continue adding just portions at a time until all of the ingredients are stirred into one dish.

Tips & Warnings

  • Be sure not to cook the rice or vegetables too soft. This will cause them to soak up the oil when frying.

  • Meat here could be beef, goat meat or chicken.

  • Add shrimps or fish(salmon, tuna) for a different taste.

  • You can add spices in either step 3 or 5. It's a matter of personal preference.

  • Measurements of ingredients might be off so, it's better you use your judgement regarding them.

  • As always, wash and cook your meat thoroughly to remove any bacteria in them.
