Soft, chewy oatmeal cookies can make a great snack or dessert on any occasion. This easy-to-make recipe creates delicious, moist cookies that will bring back wonderful childhood memories. This basic oatmeal cookie recipe is also very flexible, and you can tailor it to your needs. Adding raisins or nuts can enhance the oatmeal flavor, and lightly baking the cookies in the oven produces perfect soft and flavorful oatmeal cookies.

Instructions

Things You'll Need:

  • 1/2 cup room-temperature butter
  • 1/2 cup brown sugar
  • 1/2 cup regular sugar
  • 1/2 tsp. vanilla
  • 1 egg
  • 1 cup flour
  • 1/2 tsp.salt
  • 1/2 tsp. baking soda
  • 3/4 tsp. cinnamon
  • 1 1/2 cup oats
  1. Step 1

    Combine the butter, regular sugar and brown sugar in a large bowl. Using an electric mixer, cream them together for 2 to 3 minutes until they are well combined.

  2. Step 2

    Beat in the egg and vanilla. In a separate bowl, mix the flour, salt, baking soda and cinnamon until they are well combined. Mix these dry ingredients into the creamed mixture.

  3. Step 3

    Once the dry ingredients have been incorporated, mix in the oats. Cover the bowl and refrigerate the dough for at least 1 hour.

  4. Step 4

    Preheat the oven to 375 degrees and grease your cookie sheet. Remove the dough from the refrigerator and roll them into small balls. Place the dough balls on the cookie sheets at least 2 inches apart. Using a fork, gently press down on the dough balls to flatten them into a cookie shape.

  5. Step 5

    Place the cookie sheet into your oven and bake for 8 to 10 minutes. Remove the cookies from the oven and let them cool for 5 minutes before removing them from the baking sheet and serving.
