  • Hawaiian tropical fruit such as pineapple, mango, coconut, or strawberry

  • 1/2 cup orange juice
  • ground pepper
  • paprika
  • old bay seasoning

      Start to prepare your Hawaiian mahi mahi by creating a blackened rub. You will use 1 teaspoon of ground pepper, 2 tablespoons of old bay seasoning, 1/2 teaspoon of paprika. Mix all the seasonings together and place your mahi into the ingredients and cover well. On the stove begin to heat a cast iron pan with a thin layer of olive oil. The oil will provide a delicious taste and a great addition to your blackened and seasoned fish.

      The next step you can take is to dice up your Hawaiian tropical fruit. You can use mango, pineapple, coconut, and strawberries. Dice all the fruit and heat on low in a small sauce pan. The fruit just needs to be heated through, not necessarily cooked down.

      As the fruit is starting to simmer place your fish into the heated olive oil. Keep the temperature on medium high and then increase to high to provide adequate cooking and to ensure your mahi becomes blackened. You will want to cook the mahi mahi 3 minutes per side or until flakey. As the fish is cooking begin to start cooking your rice. Follow directions per box but substitute 1/2 cup orange juice instead of water. As you complete your cooking lay the blackened mahi mahi on a dish coupled with your rice, complete by topping with your Hawaiian fruit.
