Things You'll Need:
- Squid Steaks
- 6 6-oz. squid steaks
- 2 tsp. olive oil (extra virgin)
- 2 tsp. herbed salt
- Couscous (all optional)
- 2 cups couscous
- 3 cups water
- 1/4 cup olive oil (extra virgin)
- 1 tbsp. garlic (minced)
- 1 15-oz. can garbanzo beans
- 1 1/2 tsp. salt
- 1 1/2 tsp. black pepper
- 1 cup sweet onion (chopped)
- 1/2 cup any sweet pepper (chopped)
- 1/2 tsp. fresh oregano (chopped)
- 1/2 cup tomato sauce

Step 1
Use a meat tenderizer if the steaks aren't already tenderized. Afterward, place all squid steaks into a shallow dish. Coat all steaks with herbed salt (or 1 tsp. salt, 1 tsp. pepper) and olive oil. Cover the dish and allow steaks to marinate (not in refrigerator) for 30 minutes.

Prepare your couscous before cooking the squid steaks. Couscous goes very well with the squid, but any other accompanying dish will also work. Prepare the squid's couscous using Steps 3 and 4.

Turn stove on medium low and place a pot on the eye. Saute the garlic, onion, sweet pepper, and olive oil for 5 minutes. Add the couscous, and allow this mixture to saute until the couscous is a light, golden color.

Add water, oregano, tomato sauce, beans, salt and pepper to the mixture. Bring the mixture to a boil, and then turn down the heat to allow it to simmer. Place a lid on the pot and allow it to cook for 20 minutes. After 20 minutes, fluff the couscous with a fork.

Heat up a saute pan on the stove. Use high heat for quick cooking. Place steaks into the pan and allow them to cook for 2 to 3 minutes on each side. The steaks should be finished once they're a slight golden brown color.

Remove the steaks once they've finished cooking. If couscous is accompanying the dish, cut the steaks into strips and arrange on top of the couscous. If using another dish, you can either slice the steaks or leave them whole.
