How to Make Applesauce Muffins

Move over banana muffins because applesauce muffins have taken over! These are much like banana muffins, the difference is only in the fruit. This applesauce muffin recipe yields about 30 muffins depending on how much batter you put into each of the muffin spots on the pan.

Instructions

Things You'll Need:

  • 3 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup butter, melted
  • 2 cups granulated sugar
  • 3 tsp. vanilla extract
  • 2 cups applesauce
  • 3 cups all-purpose flour
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 cup pecans (optional)
  • 2 large mixing bowls
  • electric hand mixer
  • muffin tins
  • cupcake papers (optional)
  1. Step 1

    Heat the oven to 350 degrees F.

  2. Step 2

    In one of the mixing bowls add: eggs, oil, melted butter, granulated sugar, vanilla extract and applesauce. Mix all of these together well. Set aside.

  3. Step 3

    In the other mixing bowl, add the remaining ingredients of: flour, cinnamon, nutmeg, baking soda, baking powder, salt and optional pecans. Mix these dry ingredients together with a fork.

  4. Step 4

    Slowly add the dry ingredients to the wet ingredients and mix well. You can easily do this by adding a little bit of the dry ingredients then mixing and then add a little more dry and mix. Until all of the dry mixture has been added and everything is mixed together very well.

  5. Step 5

    If using cup cake papers, place them in the tin and fill the papers about 2/3rds of the way full with batter.
    If NOT using cup cake papers, spray the insides of the muffins tin with non-stick cooking spray or grease with shortening. Fill 2/3rds way full with batter.

  6. Step 6

    Bake for 20-25 minutes. You can check to see if your muffins are done by inserting a toothpick in the center of one of the muffins. If it comes out clean, your muffins are done.

Tips & Warnings
  • Storage tip: To keep these perfectly moist, use the gallon size zip lock bags and place the muffins in there before they are completely cooled. Gap the bag open until they compete cool. There will be some form of fog or condensation inside the zip lock bag. Seal the bag after they are completely cool. This keeps your muffins fresh and moist.
  • Use caution when operating electric mixer.
  • Use caution when handling hot pans and hot muffins.
