Pickled cauliflower in one of my favourite kind of pickles. It is great because it goes great with any kind of meat - roasted, grilled, broiled. It also goes with roasted vegetables, beans, lentils, rice and pasta. You should give it a try!!! Does this Spark an idea?

  • cauliflower
  • 32 oz jars
  • vinegar
  • sugar
  • salt
  • mustard seeds
  • black pepper
  • horseradish
  • dill
  • onion
  • carrots

Instructions

      When you buy cauliflower, make sure it is fresh. It should be firm and have no brown spots on it. Before starting, cut the florets and make sure they get washed really well. Do not throw away the core, you can peel it and eat it. It is crunchy and delicious.

      After washing the florets, you can start placing them in jar. Among them place onion rings, slices of carrots and horseradish. When the jar is almost full, place some dill, throw in 1/2 teaspoon mustard seeds, 1/4 teaspoon whole black pepper ,1/4 coriander seeds, 2 teaspoons salt, 1 teaspoon sugar, 1/4 cup vinegar and water up to the top.

      Once everything is in you can close the lid. Make sure it is perfectly secure. Now you need to use the bain marie technique to sterilize the jars. Place your jars in pots with water. On the bottom of the pots place some cotton kitchen towels. There will help the jars stay in place once the water begins to boil. Put the pots on the stove, low heat until the water starts boiling. Turn the heat off. Do not remove the jars, instead cover them with other kitchen cloths to keep them warm. Let them cool by themselves. Once cooled, you can remove them and store them in a cool place, away from heat!
      It should be ready to eat in a week!

Tips & Warnings

  • You might want to use cider vinegar. Red wine vinegar will give the cauliflower a pinkish colour.

  • Once you open a jar, keep it in the fridge afterwards.

  • You can add more sugar if you want, but not more than 2 teaspoons.

  • If you do not have fresh dill, you can used dry. The best part to use would be dill flowers.
