Wedding cake cookies can make a great dessert for a bridal shower, rehearsal celebration or wedding reception. Assemble cookies into multiple tiers reminiscent of a wedding cake, and cover the cookies with buttercream icing or fondant to look like a miniature version of the real thing. Use the wedding cake cookies as a keepsake by wrapping each stacked cookie in a clear cellophane wrap and tying it together with a satin ribbon. Use a traditional white icing to cover the cookies or have the cookies match the colors of the celebration.

    Things You'll Need

    • 1 cup butter
    • 1 cup granulated sugar
    • 1 egg
    • 1 tsp. vanilla
    • 2 1/2 cup flour
    • 1/2 tsp. baking powder
    • 1/2 tsp. salt
    • Electric or hand mixer
    • Round cookie cutters (three different sizes)
    • Baking sheet
    • Wax paper
    • Buttercream icing
    1. Sugar Cookies

      • 1

        Combine 1 cup butter and 1 cup granulated sugar in a bowl and mix with an electric mixer until smooth.

        Add one egg and 1 tsp. of vanilla extract to the mixture and beat at medium speed for about one minute.

        Combine 2 1/2 cups of flour, 1/2 tsp. baking powder and 1/2 tsp. salt in a separate bowl. Mix thoroughly. Pour the flour mixture into the butter mixture and mix thoroughly on medium speed.

        Transfer the dough onto a piece of plastic wrap, cover and refrigerate for one hour.

        Roll out the cookie dough on a floured working surface. Roll the dough to about 1/4 inch thickness. Use three different size circle cookie cutters to cut out shapes from the dough. Cut an equal amount of cookie shapes from each cookie cutter.

        Place the cookies on a greased baking tray and bake for about six minutes at 350 degrees F. Remove the cookies from the oven and cool for about 40 to 50 minutes.

      Assembling the Wedding Cake Cookies

        Place one of the large circles on a piece of wax paper. Spread a layer of buttercream icing on top and cover the icing with another large cookie.

        Spread a layer of icing on the top of the large cookies and place a medium-size cookie on top to make the second tier. Spread some buttercream icing on the medium-size cookie and place another medium-size cookie on top.

        Assemble the top tier of the wedding cake in the same way and then cover the entire multi-tiered cookie with a smooth layer of buttercream icing.

        Decorate the wedding cake cookie with edible beads or other miniature decorations.

        Repeat the steps to assemble the remainder of the cookies into wedding cakes.
