The quintessential Italian restaurant staple. This recipe will show you how easy it is for you to replicate this family favorite meal at home.

Instructions

Things You'll Need:

  • bread crumbs
  • eggs
  • parsley
  • basil
  • tomato sauce
  • chicken breast
  • cheese (mozzarella, parmesan)
  • vegetable oil
  • 1 garlic clove minced
  • flour
  • baking pan
  • aluminum foil
  • Linguine
  1. Step 1

    Make your tomato sauce or use whatever you normally use (i have written an article on my recipe)

  2. Step 2

    Prepare your chicken breasts by cleaning and tenderizing with a mallet between plastic wrap.

  3. Step 3

    Prepare your stations
    1) Flour station - bowl with flour
    2) Egg wash station - 2 eggs with 2 tbsp water
    3) Bread crumb station - plate with breadcrumbs and salt/pepper/parsley/basil

  4. Step 4

    Warm a skillet containing vegetable oil (about 1/4-1/2 inch deep in the skillet) and add the minced garlic.

  5. Step 5

    When oil is hot enough, begin by covering chicken breast with flour, then dip into egg wash and into the bread crumbs. Cover completely and then place into the hot oil. Cook each side for about 3-4 minutes (until crisp and golden brown). Only turn one time.

  6. Step 6

    Place the fried breasts into a baking pan (lined with tomato sauce) and cover with tomato sauce. Sprinkle cheese over the top and cover with aluminum foil. Place into a preheated oven (450 degrees) for 15 minutes. Serve over Linguine. ENJOY!

Tips & Warnings
  • I remove the foil and allow to cook an additional 3-4 minutes under the broiler to get the cheese browned up!
