Things You'll Need:

Step 1
Recipe ingredients:
• 2 tablespoons yeast
• ¼ cup water
• 1 cup scalded milk [cooled slightly]
• 1 teaspoon salt
• ½ cup brown sugar
• 3 tablespoons melted butter
• 4 ½ cups flour [I use Spelt flour but you can use regular wheat flour]
• 1 cup mashed sweet potatoes
• Cinnamon [dash or more] -
Step 2
Method:
• Take ¼ cup warm water and add the 2 tablespoons yeast. Set aside.
• Scald the cup of milk put in to mixer bowl and let cool a bit.
• Melt the butter and add to the scalded milk in the mixer bowl.
• Add the mashed sweet potatoes.
• Add the yeast mixture.
• Mix the flour and cinnamon together and add to the mixer bowl slowly.
• Keep the mixer going after you have everything in the mixing bowl for about 15 minutes scraping the sides of the bowl occasionally. Adding more flour if needed. These fifteen minutes takes care of the kneading you would normally do. You want the dough to not be sticky. -
Step 3
• When the dough is ready, shape into pan[s], put into a cold oven to rise. I usually turn the oven light on to give a little warmth to encourage the dough to rise. When the dough has risen to about double in size, turn on the oven to 350 degrees and bake for about 25 to 30 minutes. I sometimes will put a tent of aluminum foil over the bread to keep the top from getting too brown. Remember all ovens are different so it may take a little longer.
