The "summer" squash - zucchini, crookneck, pattypan, and other smaller, delicate squash - taste best steamed or sautéed. As with most recipes you can add your own flavor to the suggested cooking instructions below.

Things You'll Need:

  • Summer Squashes
  1. Step 1
     

    Boil sliced summer squash in salted water for 3 to 5 minutes (depending on the size of your slices) or until tender.

  2. Step 2

    Steam slices or chunks of summer squash for 2 to 4 minutes, depending on the size of the slices.

  3. Step 3

    Microwave slices or chunks of summer squash with a little water for 4 to 6 minutes.

  4. Step 4
     

    Sauté sliced summer squash over medium-high heat, with olive oil and garlic, for 5 minutes, or until browned in places and tender.

  5. Step 5

    Grill thick slices of oil-brushed summer squash over medium coals for 5 minutes per side.

  6. Step 6
     

    Try summer squash with finely chopped mixed fresh herbs (perhaps parsley, summer savory and marjoram) and lemon or butter.

Tips & Warnings
  • You don't need to peel summer squash.

on 4/21/2009 wash ,cube,and chop yellow squash add some onions use chicken broth (swanson is good.) cook till just tender,drain saving the broth. Mix squash and onion with pepperage herb dressing add some of the broth just till moist not suppy -1 egg,mixed in (just like turkey dressing ), add a little sharp cheese grated.add a little sage , a little butter or whatever you use. spray a baking pan with pam. placee all of the above in a baking pan you can also sprinkle a little cheese on top,bake 30-40 min. at 350- should be a little brown I'v cooked this for 40yrs. even kids love squash this way .Once you done its easy.

on 8/19/2008 I grew some crookneck summer squash, and they have bumpy skin that seems somewhat hard - not soft like a zucchini, and not hard like a gourd. Can I just chop and follow the cooking instructions above? Thanks for any help!
