How to Make Haupia
Haupia, a soft coconut candy, is a delicious traditional Hawaiian dessert. It's made extra-special here with fresh coconut milk, but you can use canned instead. Makes 16 to 24 pieces. Does this Spark an idea?

- 3 tbsp. sugars
- cheesecloth
- 5 tbsp. cornstarches
- 8-by-8-inch pan
- large pots

- 6 c. grated coconuts (from about two coconuts)

Make the coconut milk first. Begin by placing the grated coconut in a bowl.

Pour 2 1/2 c. boiling water over the coconut and let stand for 15 minutes.

Strain the coconut and water through a double thickness of cheesecloth, squeezing out as much coconut milk as possible.

Store the remaining grated coconut for a garnish.

Mix the cornstarch and sugar in a large pot. Whisk in 3 c. coconut milk to create a smooth paste.

Simmer the mixture until it thickens and starts to leave the sides of the pot.

Pour the mixture into a greased 8-by-8-inch pan and allow to cool.

When the mixture has completely cooled, cut into squares and serve on squares of ti leaves.

Garnish with grated coconut.

Tips & Warnings
Use freshly grated coconut, not sweetened dried coconut. Or use canned coconut milk.
For a firmer pudding, add more cornstarch when stirring in the coconut milk.
If ti leaves aren't available, spinach leaves make a fine substitute.
