How to Make Huevos Rancheros

A spicy morning treat. This recipe feeds four average people or three cowboys.

Instructions

Things You'll Need:

  • 2 tbsp. olive (not virgin) oil
  • 1 minced garlic cloves
  • 2 medium chopped onions
  • 1/2 tsp. salt
  • 1/4 cup vegetable oils
  • frying pan
  • 1/4 tsp. oregano
  • grated cheeses
  • 1 cup chopped, seeded and peeled tomatoes
  • 1/4 tsp. peppers
  • 1 large chopped bell peppers (green or red)
  • 2 tsp. chili powders
  • 1/8 tsp. powdered cumin
  • 4 corn tortillas
  • 8 large eggs
  • 2-4 tbsp. canned diced green chiles
  • Grated Cheeses
  • Frying Pan
  • 1/4 tsp. peppers
  • 1/4 tsp. oregano
  • 1 large chopped bell peppers (green or red)
  • 2-4 tbsp. canned diced green chiles
  • 2 medium chopped onions
  • 1/2 tsp. salt
  • 1 minced garlic cloves
  • 8 large eggs
  • 1 cup chopped, seeded and peeled tomatoes
  • 4 corn tortillas
  • 2 tbsp. olive (not virgin) oil
  • 1/4 cup vegetable oils
  • 1/8 tsp. powdered cumin
  • 2 tsp. chili powders
  1. Step 1

    Saute a minced garlic clove in olive oil for 5 minutes.

  2. Step 2

    Remove garlic.

  3. Step 3

    Add chopped onions and bell pepper.

  4. Step 4

    When the onions are clear, add chopped tomatoes, chili powder, oregano, cumin, salt and pepper.

  5. Step 5

    Add diced green chiles, if desired.

  6. Step 6

    Lower flame, mix ingredients well and let cook until blended. Add more pepper or other spices to taste. Keep the sauce warm.

  7. Step 7

    Poach or fry 8 eggs. (See Related eHows.)

    At the same time, fry the tortillas in vegetable oil until crispy.

  9. Step 9

    Place 2 eggs on each tortilla and cover with sauce.

  10. Step 10

    Top with grated cheese and salsa or hot sauce, as desired.
