Slow cookers are great for preparing meals ahead of time with ease. This recipe is for a tender pulled pork barbecue. The finished meat can be eaten as is or used as filling for tortillas, enchiladas or tamales.
Things You'll Need
- Slow Cooker or Crockpot
- 4 boneless pork loin chops (thick)
- 1 red pepper
- 2 stalks celery
- 1 medium onion
- Black pepper
- Olive oil
- Chicken broth
- Canned chipotle chile peppers in adobo sauce
- Lime juice
Chop red peppers, garlic, celery and onion and place in slow cooker. (One red pepper, 2 cloves garlic, 2 stalks celery, 1 medium onion).
Season pork chops on both sides with salt and pepper. Place 1-2 tablespoons of olive oil in pan. When oil is hot, place pork chops in hot oil and cook 3-4 minutes on each side or until brown.
Place browned pork chops in slow cooker on top of the vegetables. Mix together 1 cup chicken broth, 1/4 cup lime juice, 4 tablespoons chipotle peppers and pour over pork chops.
Cover slow cooker with lid and cook on low for 6-7 hours or high for 3-4 hours.
Remove pork from slow cooker, allow to cool and pull by hand to shred.
