Vegetarians and vegans are often left with only poor choices at a cook-out; rubbery, soy-infused veggie burgers and beans can get old pretty quickly. Even omnivores will love these sweet potato burgers, though, so make enough to share. Does this Spark an idea?

Things You'll Need

  • 5 large sweet potatoes
  • 2 c. uncooked brown rice
  • 4 c water or broth (for rice)
  • 2 tbsp oil or butter
  • 1 egg
  • 1 large red onion, diced
  • 2 c. whole wheat or Italian breadcrumbs
  • 2 tbsp. Worcestershire sauce
  • 1 tsp. garlic salt
  • 1 tsp. cayenne pepper
  • 1 tsp. white pepper

Instructions

    • 1

      Preheat oven to 350 degrees F. Bake the sweet potatoes for 1-1/2 hours or until done. Scoop out the insides into a large bowl.

      Prepare the rice while the potatoes are cooking, Boil the water (or broth) and butter (or oil), add the rice and simmer for 50 minutes.

      Combine the cooked rice, egg, onion, and spices with the sweet potatoes and mix well. Form the mixture into burger patties. Spread breadcrumbs out on a plate and coat each burger with breadcrumbs.

      Bake the burgers at 350 F. for 20-25 minutes (you can also grill them if you like).

Tips & Warnings

  • Serve on buns, or atop a green salad.

  • On buns they're great with cheddar cheese, traditional burger toppings or creamy salad dressings.

  • These burgers freeze well, and should be stored with a piece of wax paper between each one.
