Things You'll Need:
- 1 1/4 cup almond flour
- 1 cup cooking-friendly sugar substitute
- 1/4 cup butter, at room temperature
- 1 large egg
- 1 tsp. vanilla
- Cookie sheet
- Two spoons
- Spatula
- Mixer
- Nonstick baking spray
- Fork

Step 1
Preheat oven to 350 degrees F.

Step 2
Stir together almond flour and cooking-friendly sugar substitute. Make sure that the two ingredients are completely mixed before you move on to the next step.

The batter will be slightly stiff when everything is blended in.Mix in butter, egg and vanilla. Blend all the ingredients until there are no lumps and the batter is smooth and uniform in color.

Spray cookie sheets with nonstick cooking spray. This will make the cookies easy to remove when they are done baking.

Use the spoons to form 1-inch balls. Scoop a spoonful of cookie dough with one spoon and then push it off the bowl of the spoon with the other spoon. This will result in round cookie balls on the cookie sheet.

Place the balls about 2 inches apart on the cookie sheet. As they bake, the cookies will spread slightly. This prevents them from turning into one big cookie.

Flatten each ball with the fork. Press down on the top of a cookie ball with the tines of the fork, then do the same thing in the other direction to make a pretty cross-hatch pattern on the top of the cookie.

You can decorate the cookies with almonds or sugar-substitute.Bake for 8 minutes. The cookies are done when they are set but not brown. Once they have cooled, enjoy!
