This recipe is great on a cold winter day. It is totally complete with meat and a ton of vegetables. Throw in some biscuits and you have an awesome healthy and full meal. Here is how you can make ham vegetable soup in a crock pot:

Difficulty: Moderate
Instructions

Things You'll Need:

  • 1 Large Ham Slice
  • 1 can of sliced potatoes
  • 2 cans of mixed vegetables
  • 1 small onion chopped fine
  • 1 can of pinto beans
  • 1 can of diced potatoes
  • 1 small can of tomato paste
  • 3 tbs of powdered chicken bouillon
  • 2 bay leaves
  • 3 shakes of parsley
  • 1 tsp of pepper
  • water
  • Crock Pot
  1. Step 1

Take your ham slice out of the package and chop in to bite sized pieces. Place in the crock pot.

  2. Step 2

Add the following ingredients to your crock pot: potatoes, mixed vegetables, onion, pinto beans, diced potatoes, tomato paste, chicken bouillon, bay leaves, parsley, and pepper.

  3. Step 3

Now add water to your desired thickness. I suggest at least 3/4 of the way up the crock pot if not more.

  4. Step 4

Mix together all of the ingredients.

  5. Step 5

Set your crock pot to low and cook 8-10 hours.

  6. Step 6

Scoop out the bay leaves before serving.

  7. Step 7

    Serve hot.

Tips & Warnings
  • Biscuits or crescent rolls go great with this dish.
  • You can also substitute any type of beans for the pinto beans (lima, kidney, garbanzo).
  • Do not add salt to this dish. The ham is already salty and adding salt will taste awful.
