Things You'll Need
- Cream Puff Ingredients:
- 1 cup water
- 1/2 cup butter
- 2 tsp. sugar
- 1 cup all-purpose flour
- 4 eggs
- Strawberry Mousse Filling Ingredients:
- 1-1/2 cups frozen strawberries, thawed
- 1/3 cup granulated sugar
- 2 cups whipping cream
- powdered sugar for dusting

- Cookie Sheets
- Electric Mixer
- Blender/Food Processor
How to Make Mini Cream Puffs
Preheat your oven to 400 degrees. Lay two cookie sheets with parchment paper.
Add water, butter, and sugar to a medium saucepan that is over medium-high heat. Bring to a boil.
Reduce to low heat and add the flour all at once. Stir continuously until the mixture forms a ball.
Beat each egg, one at a time, into the flour mixture with an electric mixer. Let each egg be well blended before adding another. The batter is finished with it is smooth and glossy.
Drop 24 heaping tablespoons of batter onto the cookie sheets one at a time, leaving plenty of room for them to expand when they're cooking.
Bake for 35 minutes. Then, open the oven door and quickly cut a hole into the side of each cream puff so steam is able to escape. Bake for another 5 minutes. The cream puffs are finished when they have a crisp interior and appear to be golden brown. Let them cool completely.
Strawberry Mousse Filling
Puree the strawberries with sugar in a food processor or blender.
Beat the whipping cream in an electric mixer until it is stiff. Then, add the strawberry puree and beat until it is mixed well.
Slice the top of each cream puff. With a spoon, add some of the strawberry mousse filling and replace the top of the cream puff.
Arrange the cream puffs on the platter you want them to be served on.
Sprinkle powdered sugar on top of all the cream puffs, and serve right away.
