How to Make Mini Cream Puffs

  • Preheat your oven to 400 degrees. Lay two cookie sheets with parchment paper.

  • Add water, butter, and sugar to a medium saucepan that is over medium-high heat. Bring to a boil.

  • Reduce to low heat and add the flour all at once. Stir continuously until the mixture forms a ball.

  • Beat each egg, one at a time, into the flour mixture with an electric mixer. Let each egg be well blended before adding another. The batter is finished with it is smooth and glossy.

  • Drop 24 heaping tablespoons of batter onto the cookie sheets one at a time, leaving plenty of room for them to expand when they're cooking.

  • Bake for 35 minutes. Then, open the oven door and quickly cut a hole into the side of each cream puff so steam is able to escape. Bake for another 5 minutes. The cream puffs are finished when they have a crisp interior and appear to be golden brown. Let them cool completely.

Strawberry Mousse Filling

  • Puree the strawberries with sugar in a food processor or blender.

  • Beat the whipping cream in an electric mixer until it is stiff. Then, add the strawberry puree and beat until it is mixed well.

  • Slice the top of each cream puff. With a spoon, add some of the strawberry mousse filling and replace the top of the cream puff.

  • Arrange the cream puffs on the platter you want them to be served on.

  • Sprinkle powdered sugar on top of all the cream puffs, and serve right away.
