How to Make Eggplant Parmesan
Vegetarian cooking has improved leaps and bounds over the last 2 decades. Many ethnic type foods and traditional recipes can be easily modified into a very tasty vegetarian option. In this article, we will look at how to make a delicious dish known as eggplant parmesian. Does this Spark an idea?
Things You'll Need
- 1. Egg plant
- 1. Jar of spaghetti sauce.( Unless you choose to make your own)
- 1.Egg
- Bread Crumbs
- 2 large bags of grades mozzarella cheese
- Parmesan Cheese
- Salt
- Deep dish baking pan
- Cooking oil

How to make Eggplant Parmesan

Take your eggplant, cut off the end and peel off the skin. Once you have done this you need to cut the egg plant into thin slices about 1 quarter inch thick.

Lay out the eggplant on a flat surface. Sprinkle lightly with salt until the moisture is drawn out, as they contain a lot of water. You only need to let the salt sit on top for a few minutes.

Pour the oil into the pan and start it cooking on medium heat. Beat the egg in a separate bowl. Take the egg plant slices and dip them into the egg. Then take the slices and cover them with bread crumbs. Take the breaded egg plant slices and cook them in the hot oil until they turn a golden brown color. Continue this until all the eggplant slices have been cooked.

Grab your deep dish pan. Take your egg plant slices and place them next to each other to cover the bottom. Try not to let them over lap. You want to create your first layer. On top of the egg plant layer add some of the spaghetti sauce. Make sure you spread it evenly over the egg plant layer.

Place another layer of eggplant slices on top of the sauce. Again, try not to let them over lap. Once you have your next layer made, place mozzarella cheese on top.

Keep adding layers, alternating between egg plant slices, sauce and mozzarella cheese. Do this until you either run out or reach the top of the baking dish. Once you have reached the top add a generous layer of Parmesan cheese. Bake in the oven between 175-200 for about 45 minutes. Remember to check frequently. When finished you will have a vegetarian dish that will make your mouth water.

Tips & Warnings
This dish can be easily altered for those that enjoy meat. Simply use mince for some of the cheese layers. You could also use a spaghetti sauce with meat included.
