How to Make New York Cheesecake

Instructions

Things You'll Need:

  • 1/2 cup butter
  • 1/4 cup packed brown sugar
  • 1 egg
  • 1 1/4 cup flour
  • 4 8 oz packages of cream cheese, softened
  • 1/4 cup flour
  • 1 1/4 cup sugar
  • 3 eggs
  • 1 tablespoon vanilla
  • 16 oz carton sour cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  1. Step 1

    Preheat oven to 350 degrees. Beat together butter and brown sugar until fluffy. Add 1 egg and beat well. Slowly add 1 1/4 cup flour. Divide dough in half. Cover and refrigerate one section.

  2. Step 2

    Press 1/2 section of dough into bottom only of 10-inch springform pan (sides should be removed). Place pan bottom on cookie sheet and bake for 10 minutes. Allow to cool. Attach sides of pan to bottom. Press chilled dough onto sides of pan about 2 inches up from bottom. Set aside. Increase oven temperature to 450 degrees.

  3. Step 3

    Combine cream cheese and 1 1/4 cups sugar in bowl and beat until fluffy. Add in 1/4 cup flour, remaining eggs and 1 tablespoon vanilla and beat until smooth. Stir in 1/2 cup of the sour cream. Pour into prepared crust. Place on cookie sheet and bake for 10 minutes.

  4. Step 4

    Reduce oven temperature to 300 degrees and continue baking cheesecake until center appears nearly set when pan is shaken. Remove from oven and allow to cool slightly. Combine remaining sour cream, 1/4 cup sugar and 1 teaspoon of vanilla in small bowl. Spread over cheesecake. Place in oven and bake for an additional 15 minutes.

  5. Step 5

    Cool on wire rack 15 minutes before loosening crust. Allow to cool another 30 minutes, then remove pan sides. Cover and chill for at least 4 hours. Let stand at room temperature for 15 minutes before serving.
