How to Make Glaze for Fruit on Top of a Cheesecake

A cheesecake covered with fruit is as eye-catching as it is delicious. Preserve the look of your freshly baked dessert with a simple glaze. The glaze serves two purposes. It prevents the fruit from drying out and gives the cake an appealing sheen. This glaze can be used for any dessert topped with fruit, including tarts, cakes and pies. You can use any type of jam or fruit preserves you like. Apricot, peach, pear and apple will all be relatively transparent, while currant, quince, raspberry and strawberry will give your cake a rosy hue.

Scoop the jam or preserves into a small saucepan. You'll need about 1/2 cup of jam or preserves for one cheesecake. Add 1 tablespoon of water for every 1/2 cup of jam or preserves used.

Heat the mixture for about 1 minute over medium heat until it turns to liquid.

Remove the mixture from heat. If you used preserves or a jam with chunks of fruit, pour it through a fine-mesh sieve to remove any large pieces.

Pour the glaze over the fruit-topped cheesecake while it is still warm. Allow the glaze to cool and set for at least 30 minutes before serving.
