Slow cookers are great: It's wonderful to come home and have dinner made. Serve this chicken piccata with pasta and vegetables. Voila. You have a nice meal. Does this Spark an idea?

Things You'll Need

  • 6 chicken breasts
  • 3 tablespoons of butter
  • 2 teaspoons olive oil
  • 1/2 cup chicken broth
  • 1/4 cup vermouth
  • 2 tablespoons of lemon juice
  • 1 tablespoon capers
  • Lemon slices for garnish

Instructions

    • 1

      Time your meal. If you'll be cooking it fewer than six hours, use the high setting on your slow cooker. If you're cooking it more than eight hours, use low.

      Put the chicken breasts in the bottom of your slow cooker. Pour the rest of the ingredients on top of the chicken breasts.

      Leave the lid on. When the time is up, your dinner is ready.

      Check to make sure the chicken is done thoroughly. Cut into one of the pieces and make sure juices run clear.

  • I'm scared of undercooked chicken, so I always cut one of the breasts to make sure it's piping hot and done on the inside!!
