      Use ripe zucchini to make zucchini bread. Choose zucchini that are no more than 6 inches long and 2 inches in diameter. Additionally, look for zucchini whose skin is shiny and free of bruises, blemishes and cuts. The stem should be about 1 inch long, slightly prickly and moist to the touch.
