How to Make Lamb Stew

Few things are more satisfying than a large bowl of lamb stew on a cold winter's night - or even a warm summer afternoon! There was lots of lamb left over from the Thanksgiving roast this year. This is what you can do with it.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2-3 pounds lamb meat, trimmed and cut in cubes
  • 1 onion
  • 1 can crushed tomatoes
  • Chicken broth
  • Olive oil
  • Celery
  • Rosemary
  • Garlic
  • Salt
  • Red wine
  • Parsley
  • Potatoes, rice or pasta
  1. Step 1

    The above ingredients may vary from recipe to recipe. You can add carrots, potatoes and beer if you lean toward the Irish, or fresh tomatoes, cilantro and wine if you want to go Italian. No matter, the basics remain the same. Lamb stew is a delicious meal-in-a-bowl that can be easily frozen and reheated for another time.

  2. Step 2

    Brown your meat. Warm some olive oil in a large saucepan. When it starts smoking, brown your meat, making sure all sides have been partially cooked. If you are using left-overs, you can skip this step as the meat has already been cooked.

  3. Step 3

    Saute your vegetables. Remove the meat. Warm some more olive oil. Add your chopped onion, celery, carrots (if you're using them) salt, pepper and herbs. If you're going to add potatoes, those should be cooked separately in a pot of boiling water until not quite done and set aside.

  4. Step 4

    When the veggies are tender but still crisp, remove them and set aside. Add a little olive oil and saute your garlic for a few moments. Throw in your partially-cooked meat. Add your can of crushed tomatoes and enough chicken stock to cover. You can dilute this combo with water and a splash of red wine and season with salt until the broth tastes just right.

  5. Step 5

    Start stewing. Cover and let the meat simmer in the broth for at least an hour, stirring occasionally so it doesn't stick to the pan.

  6. Step 6

    Add your vegetables 15 minutes before serving. This way they add their goodness to the broth without getting all mushy. Don't overcook your vegetables!

  7. Step 7

    Serve over noodles or rice or with potatoes or a hearty slice of bread. Many restaurants serve stew inside hollowed loaves of round bread. That would be a great way to serve this delicious dish!

Tips & Warnings
  • The more time you have to simmer your meat, the more tender it will be.
  • Better to undercook your vegetables, especially if you are going to freeze the stew and eat it another time.
  • Cooked potatoes, rice and pasta do not freeze well. Better to freeze the stew without these additions and make them fresh each time.
